Carmelized Pork

Yesterday I ventured into the realm Vietnamese cooking and tried my hand at Carmelized Pork, one of my all time favorite dishes.

It is made by melting a cup of sugar in fish sauce. I warned the children that the cooking would smell like dead fish.

The children confirm my worst fears as I started cooking. Bryan put on a winter hat that completely blocked his face. I said, "Bryan why are you wearing your hat like that?"

He said, "To cover up the smell."

Finding that it didn't sufficiently subdue the smell, he next tied a thick shoestring propped above each ear and blocking his nostrils.

For the next 30 minutes, the children ran around the house exclaiming various sighs of "Eww!"

Finally I told Bryan, "Maybe I should cook this while you're at school.
